Amla – 8-10 (cut into small pieces)
Mustard Oil – 2 tsp
Fennel – 1 tsp
Fenugreek Seeds – ¼ tsp
Coriander Seeds – ½ tsp
Coarse sugar (crushed) – 2 cups
Kashmiri Red Chilli Powder – ½ tsp
Black Pepper – ½ tsp
Turmeric Powder – ½ tsp
Coriander Powder – 1 tsp
salt (appropriate amount)
black salt – (according to taste)
Roasted cumin powder – ½ tsp
Garam masala – ½ teaspoon

Prepare amla lainji this way
First, bring water to a boil in a container. Then put the amla in it and let it boil in water for at least 10 minutes.
Then take it out, and when it cools, cut it into small pieces.
Now place a wok or nonstick skillet over medium heat. Add mustard oil. When it gets hot, add the fennel, fenugreek seeds, coriander seeds, now toast them all.
Put the amla cubes in the pot and add turmeric powder, coriander powder, garam masala, cumin powder, black pepper powder and red chilli powder on top. Mix everything.
Now salt according to taste and add some black salt on top. Now mix all this up well.
Ground jaggery is added to it for sweetness. Cook over medium heat for 5 to 6 minutes, until the jaggery has melted.
Now if its a thin consistency then keep cooking till it thickens.
When it thickens, turn off the flame, take it out and let it cool in a bowl for 2 days.
Your sweet and sour currant roast is ready. Seal it in a glass container.
